We received an online enquiry from a new Geelong business about setting up a commercial bakery in Newtown. The client had no existing services on the proposed site and wanted to know the best way to set up their new bakery which was both cost-effective and functional. We sent out Peter one of our leading hands to design the hydraulics and help with the permits required by Barwon Water for the new bakery.
Arrival on Site – Inspection & Service Testing
Peter met with the owners on-site to run through the full scope of works required and performed a water line pressure test and drainage camera CCTV inspection to check capacity and space constraints for the new installation. Having designed & installed multiple commercial restaurants in the Geelong region previously, our team were highly experienced with the process and what permits/standards were required by Geelong council, Barwon Water, and the health department. Being a commercial bakery it was a requirement to have a minimum 1200ltr grease interceptor installed in the food prep area. Commercial trade waste contains food, fat, oils, and grease which can solidify in sewers causing blockages and damage to Barwon Waters assets.
Installation
With cost & time being a factor, we proposed installing a custom above-ground unit and raising the bench height to achieve a grade in the drainage to the grease interceptor. This would speed up the installation process and lower the cost by saving on concrete cutting, space, and machinery hire. We could utilise the unused void under the stairwell for the new services by removing the existing kitchen and installing a new wall and service door. This allowed for access to pump-outs of the food and oil interceptors which is required as the fat, oil and settled food particles and solids accumulate over time. It also allowed us to reconfigure the existing water, modify the hot water service location and install the new ventilation lines while the frame was exposed to maximise space for the new kitchen.
